The website where I found this reckoned this was the authentic scoff for Munich's annual orgy of beer swilling. Not having been to said fest I can't comment on the accuracy of that statement. However, if you want to re-create an Oktoberfest in your front lounge you could do worse than: - make up this recipe, spread it on rye bread, - fire up the CD's of German Oompah bands, - make ready gallons of Ropetackle Golden Ale together with the litre-sized mugs to put it in - and don't forget a goodly number of blonde, buxom, dirndl-wearing wenches to carry in the mugs a dozen at a time . . . |

* 4oz/125g White cheddar cheese (or similar) finely shredded * 4oz/125g Emmentaler cheese (or similar) finely shredded * 2 triangles of spreading cheese (the kind that comes in a round box with each triangle foil wrapped – La Vache Qui Rit, Dairylea, or the nice own brand we found in M&S) * 1 clove of garlic minced * ¼ teaspoon dry mustard Dash of Worcestershire sauce (the original recipe had rather more, which overwhelmed the other flavours, so add with caution) * 2 ½ fl oz/75ml Ropetackle Golden Ale (plenty left to drink while you’re slaving in the kitchen!) |

Combine all of the ingredients except the beer – we suggest you use the technique of chopping/mixing with a knife suggested in the previous recipe, although you could use a food processor or mixer. When the cheese is smooth and mixed thoroughly, add the beer very gradually until blended – you’re aiming to make a spreadable paste. Chill thoroughly before serving – the 4 hours is a minimum, overnight is better still. Before serving decorate with a sprinkle of parika or, better still, schnittlauch – finely chopped chives. Serve with rye bread, crackers, pretzels, or bread sticks. |
