Merrynade for Game

Apologies for the pun!

This marinade is ideal for game, when it is best left overnight in the fridge to allow the flavours to be absorbed and for the marinade to tenderise the meat.  It can also be used for ham or pork, in which case give it up to six hours in the fridge.
The amount of beer you need will
depend on the cut of meat you're marinading and the dish (or plastic bag) you use.  Plan carefully so that you only need to use half the bottle, then you can drink the rest - chef's privilege!
 

 

Preparation Time: 20-30 minutes         

Marinade Time: At least 4 hours, ideally overnight


Ingredients:

  * 1 bottle Merry Andrew 

* 1 teaspoon dry English mustard

* 3 tablespoons (50ml) black treacle/molasses

* 3 tablespoons (50ml) malt vinegar

* 1 small onion finely chopped

* 1 tablespoon/15ml  Worcester sauce

* 1/4 teaspoon paprika

1 bay leaf

 

*   This made plenty of marinade for a couple of large venison steaks.  For more or larger cuts of meat increase the quantities with the  * symbol. 

 

Method:

Open the bottle to release some of the carbonation in the beer and meanwhile chop the onion.  Start warming the required quantity of Merry Andrew in a small saucepan over a low heat.  Put the mustard in a cup and pour on a small amount of the warm beer, while stirring vigorously, to make a smooth paste.  Stir this into the beer in the saucepan and mix well. 
Gradually stir in the remaining ingredients.  Bring to a boil (be careful it doesn't boil over) then simmer for 2 minutes.  Let it cool before you put it on the meat. Either put the meat in a dish with the marinade and cover it with (food quality) cling-film or put the meat with the marinade in plastic food bag which can be firmly sealed and place in the fridge.  For game of all types it's best to leave it overnight, whereas ham or pork is best with up to six hours in the fridge.
